We will investigate the possibility of using the measurement of line and plate loss with a bioscale.
Resources and implementer
Does not require additional personnel resources. Meetings 2 times a year.
Implemented by: Saimaan Tukipalvelut Oy and the Ilmastovisaat project
Meter
Implemented: yes/no. Total cost estimate.
Schedule
2021-2022
Effect of the procedure
With the help of bioscales, loss can be measured and, with the help of the results, also controlled in every restaurant and contribute to sustainable development.
In catering services, about 20% of the food produced ends up as waste in Finland. Annually, this means approximately 75–85 million kilograms of completely edible food. At the same time, food accounts for about 20% of human-caused carbon dioxide emissions. With the help of the Biovaaka system, the amount (kg), value (€) and carbon footprint (C02) of the food line's food waste can be made visible and enables informed management.
Situation in December 2021:
Piloting started 08/2021 at Vuoksenniska's new and old school and Vuoksenniska's kindergarten. Decisions are made based on experience. in 2022, will the system be expanded to other school centers and daycare centers.
